The only reason to record these is to get out of the anxiety and develop a "don't give a fuck mindset."
You can get better at writing persuasive copy, but when it comes to dealing with the real world and clients, that's where the real effort comes in.
First, you need to make yourself comfortable.
100s of people will look at you, but you shouldn't give a fuck.
In the end, just record over the period of time; then you will be better and feel more comfortable in public and with face-to-face interaction on calls, too.
And it's the same for writing. The more you write, the better you will get over a period of time.
